The pages linked to below contain charts illustrating the size ranges over which a variety of devices work. The information was obtained mostly from manufacturers' specifications and no attempt has been made to verify the information or to ensure that a standard measurement method was used (eg. with cams what fraction of the total range specified can be used in practice?). Also note that for passive devices, such as nuts or hexes, each piece only works at certain specific points throughout the range whereas active devices, such as cams, can be adjusted continuously across the entire range.
I created these charts to get a rough idea of how various devices compare in terms of the sizes of the placements where they can be used. I'm not trying to be highly accurate and in any case your selection of devices should also be based on a number of other factors which I'm not going to try to quantify :)
